Ingredients:

  • 2 kilograms - Belly Pork , cubed with/without bones
  • 4 - eggs, boiled
  • 5 cloves - garlic, smashed
  • 5 slices - ginger, sliced
  • 3 pieces - dried star anise
  • 3 cups - water, to cover completely
  • 2 tablespoons - black soya sauce, to colour
  • 1 teaspoons - salt, to taste
  • 3 tablespoons - sugar, to taste
  • Directions:

    Boil eggs separately and peel in cold water. Roll around on cloth to ensure easy peel. Slow cook pork with all ingredients except eggs for 4 hrs high or 8hrs slow. When pork is nearly done, add boiled eggs for another 1hr. Reduce sauce over stove if required.

    Notes

    Can substitute eggs with wood ears/ chinese fungus. Add fungus with pork to cook at start.
