Spring Salad with Strawberries and Goat Cheese Tell a Friend

Ingredients:

  • 3 tablespoons - orange juice
  • 1 tablespoons - canola oil
  • 2 teaspoons - aged balsamic vinegar
  • 1/4 teaspoons - black pepper
  • 1/8 teaspoons - table salt
  • 4 cups - mixed greens
  • 1 cups - sliced strawberries OR red-skinned pears
  • 1/4 cups - crumbled semi-soft goat cheese
  • 2 tablespoons - salted dry-roasted pistachio nuts, coarsely chopped
  • Directions:

    In a small bowl, stir together orange juice with oil, vinegar, pepper and salt; set aside.

    Arrange the mixed greens in a large shallow bowl; top with strawberries (or pears), cheese and nuts.

    Just before serving, stir dressing to combine well and drizzle over salad; toss gently.

    Yields about 1 1/4 cups per serving.
