Ingredients:

Salad
  • 10 - baby spinach
  • 1 pints - grape tomatoes, halved
  • 1/2 cups - dried apricot, chopped
  • 4 - crumbled feta or goat cheese
  • 1 whole - ripe avocado, peeled and diced
  • 1/2 cups - toasted pecans
  • Apricot Vinaigrette
  • 1/3 cups - vegetable oil
  • 2 tablespoons - white wine vinegar
  • 2 tablespoons - orange juice
  • 2 tablespoons - apricot jam
  • 1/8 teaspoons - salt
  • 1/8 teaspoons - ground pepper
  • Directions:

    For vinaigrette, add all vinaigrette ingredients to small bowl and whisk until well blended; set aside.
    For salad, layer all salad ingredients in large bowl and toss to mix.
    Drizzle vinaigrette over salad and toss to coat.
