Spinach Flan Tell a Friend

Ingredients:

  • 4 ounces - pastry shell
  • 1 pounds - fresh spinach OR 1-1/2 pkg frozen spinach
  • 8 ounces - cottage cheese
  • 3 - eggs
  • 1 ounces - grated Parmesan
  • 4 tablespoons - cream
  • - salt and pepper, to taste
  • - a pinch of nutmeg
  • Directions:

    Bake pastry shell.

    Cook spinach; drain thoroughly.

    Sieve cottage cheese; add spinach, eggs, Parmesan and cream. Mix well; season with salt and pepper and nutmeg.

    Spoon into pastry shell, spreading evenly over pastry and bake for 30 minutes.
