Spinach Filled Mushrooms Tell a Friend

  • 16 - to 20 mushrooms, 1-1/2 to 2 inches in size
  • 1 cups - finely chopped onion
  • 3 tablespoons - butter or margarine
  • 1 packages - 10 oz. chopped frozen spinach, cooked according to pkg directions, drained
  • 1/2 cups - grated Swiss cheese
  • - grated Parmesan cheese
  • Directions:

    Remove stems from mushrooms. Chop stems finely and saute with onion in butter until onion is tender but not brown.

    Add spinach; stir to mix thoroughly. Add Swiss cheese, stirring lightly. Remove from heat.

    Fill mushroom caps with mixture; sprinkle with Parmesan cheese and place on a buttered shallow baking pan.

    Bake at 300 degrees F for 15 to 20 minutes. Serve warm.
