Spinach and Avocado Salad with Basil Vinaigrette Tell a Friend

  • 1/2 cups - olive oil
  • 1/4 cups - red wine vinegar
  • 1 tablespoons - dried basil
  • 2 cloves - garlic, chopped
  • 2 teaspoons - sugar
  • 1/4 cups - chopped fresh basil
  • Salad
  • 2 packages - 6 oz. baby spinach leaves
  • 1 - red onion, peeled, halved, sliced thinly
  • 1 cups - walnuts, toasted, coarsely chopped
  • 3 - avocados, peeled, pitted, sliced
  • Directions:

    For Dressing:

    Whisk together oil, vinegar, dried basil, garlic and sugar in small bowl until sugar dissolves. Whisk in fresh basil. Season dressing with salt and pepper.

    For Salad:

    Mix spinach, red onion and walnuts in large bowl. Add avocados and dressing; toss gently to coat.
