Ingredients:

  • 2 teaspoons - coconut oil
  • 3 ounces - non-GMO tempeh OR organic lean ground turkey, crumbled
  • 1/2 - small onion, diced
  • 1/2 - organic red bell pepper, seeded, diced
  • 1/2 - organic green bell pepper, seeded, diced
  • 1/2 - serrano chile, seeded, diced
  • 1/2 cups - cooked black beans
  • 1/2 cups - cooked pinto beans
  • 1/2 cups - organic crushed tomatoes
  • 1 teaspoons - chili powder
  • 1 teaspoons - ground cumin
  • 1/2 teaspoons - garlic powder
  • 1/2 - avocado, diced, for topping
  • - shredded cheese, for topping, optional
  • Directions:

    1. In pot, heat oil over medium heat and sauté tempeh or turkey with onion, bell peppers and serrano chile. Season with salt and black pepper and cook until browned, about 10 minutes.

    2. Stir in beans, tomatoes, spices and 2 cups of water. Simmer 20-25 minutes until flavors have blended.

    3. Serve hot topped with avocado and cheese, if desired.
