Spicy Beanburgers Tell a Friend

Ingredients:

  • 1 - carrot, chopped
  • 3 1/2 ounces - potato, peeled, chopped
  • 1 - red onion, finely chopped
  • 1 - red chili pepper, deseeded, finely chopped
  • 3 1/2 ounces - canned mixed beans, drained, rinsed
  • 1 - egg
  • 2 teaspoons - ground cumin
  • 4 tablespoons - finely chopped cilantro
  • - salt and pepper
  • - Pam cooking spray
  • Directions:

    Place all ingredients in a food processor; season well and blend until well combined. Transfer into a bowl and chill for 3-4 hours or overnight.

    Preheat oven to 180 degrees C or Gas 4 or 350 degrees F. Divide the bean mixture into two portions and shape each into a burger. Place on a baking tray lined with baking parchment; spray with Pam and cook for 12-15 minutes or until golden.

    Serve with Slimming World fries.
