  • 1 1/2 pounds - boneless, skinless chicken thigh
  • 1/2 cups - catsup
  • 4 tablespoons - balsamic vinegar
  • 1 1/2 teaspoons - dry mustard
  • 1 - bay leaf
  • 1/2 cups - water
  • 2 tablespoons - olive oil
  • 2 teaspoons - worcestershire sauce
  • 8 teaspoons - sugar
  • 2 tablespoons - dehydrated onion flakes
  • Directions:

    Preheat oven to 350 degrees. Spray shallow baking dish with cooking spray and place chicken in it. In small saucepan, mix all other ingredients. Bring to a boil over medium heat and cook two minutes. Pour sauce over chicken, bake 40 minutes.

    You can substitute chicken breast for fewer calories, just cut it into small pieces and cook for less time, about 30 minutes. This makes a really yummy sauce--we like to serve this with rice and put the sauce over it.
