Ingredients:

  • 5 tablespoons - Oil, I use Coconut or Sunflower - but any will do.
  • 1 1/2 cups - Onions, chopped/diced
  • 3 cups - White Basmati Rice
  • 4 cups - Chicken Broth, Beef Broth works just as well - gives it a more full/rich flavor
  • 2 cups - Salsa, (however hot you like it!)
  • 2 tablespoons - Chili Powder
  • 2 teaspoons - Cumin
  • 2 cloves - Garlic
  • 2 teaspoons - Salt, or as desired
  • Directions:

    Heat oil in large skillet to medium-high. Sautee onions and add rice until lightly browned, 5-10 minutes as desired. Turn heat to Lo. Add four cups of broth, salsa, garlic and spices. Stir well. Cover and Simmer around 20 minutes.

    White rice and onions browned, then simmered in chicken broth and salsa. A Great side dish for any Mexican meal!

    Notes

    Nice additions would be cilantro, jalapenos and/or shredded cheddar cheese sprinkled on top! We also like to crisp ours a little - so after it has simmered, turn up heat to medium-high and turn over several times to give it an oven-crisped effect. Delish! This is a large recipe and feeds my family of 9 with leftovers. It could easily be cut in half.
