Ingredients:

  • 1 whole - spagetti squash, cooked
  • 6 pieces - turkey itallian sausage
  • 1 cups - ricotta cheese
  • 1/2 cups - cottage cheese
  • 1 1/2 cups - spagetti sauce
  • 2/3 cups - mozzarella cheese
  • Directions:

    1. Cook spaghetti squash approx 35-45 min in 400 oven. Make sure you can easily pierce the squash with a knife to test done-ness
    2. Cook turkey sausage while squash cooks.
    3. When squash is done, scrape out the 'noodles' into a casserole dish.
    4. Change the oven to 375
    5. Add the spaghetti sauce. Mix together.
    6. Layer on the sausage.
    7. Mix the ricotta and the cottage cheese together and dollop on the top of the squash / sauce and make a layer.
    8. Sprinkle the mozzarella cheese on top.
    9. Bake until bubbly. 15-20 min.

    Notes

    *Cottage cheese is optional. I think it adds a creamy-ness
    *Use real tomato sauce and then you don't need to count a purple, just add a green
    *Add Italian type seasonings to taste.
    * SOOO good for lunch the next day
