Sour Cream Green Enchiladas Tell a Friend

  • 2 cups - Cooked chicken, Chopped
  • 1/2 jars - Cookwell & Co Green Chili Stew
  • 1/2 cups - Sour cream
  • 8 whole - Corn tortillas
  • 2 cups - Monterey Jack cheese
  • Directions:

    1. Preheat oven to 375. Coat baking dish w/ non-stick cooking oil.

    2. In a bowl mix chicken and 1 C Monterey Jack cheese.

    3. In a separate bowl mix Green Chili stew and sour cream, combine well and set aside.

    4. Wrap damp paper towels around tortillas and place in microwave for 30 sec, until pliable. Spoon about 1/3 C chicken mix onto centr of each tortilla and roll, arrange seam side down in baking dish. Top enchiladas w/ chili mix and then remaining cheese.

    5. Bake in oven for 15 min.
