  • 4 1/2 cups - sliced carrots
  • 1/2 cups - mayonnaise
  • 2 tablespoons - chopped onion
  • 2 tablespoons - prepared horseradish
  • 1/4 teaspoons - salt and pepper
  • 1/4 cups - crushed saltine crackers
  • 2 tablespoons - butter, melted
  • Directions:

    Cook carrots in small amount of salted water until tender.

    Drain and place in greased baking dish.

    Combine mayonnaise, onion, horseradish, salt and pepper; combine with carrots.

    Mix crushed crackers with melted butter; sprinkle over carrots.

    Bake for 30 minutes at 350 degrees F.
