Remove ribs from fridge for at least an hour. Rinse with water and remove the back membrane on each rib, slide a fork down the bone on the back side, lift up and peel membrane off. Season liberally with Italian, Montreal steak spice and black pepper. Pre heat smoker to 225°F.
