Ingredients:

  • 3 cups - sugar
  • 1 cups - oil
  • 4 - eggs
  • 1 teaspoons - finely grated lemon rind
  • 2 1/2 cups - canned pumpkin
  • 1/4 cups - Smirnoff vodka
  • 3 1/2 cups - sifted flour
  • 3/4 teaspoons - salt
  • 2 teaspoons - baking soda
  • 3/4 teaspoons - nutmeg
  • 1 teaspoons - cinnamon
  • 1 teaspoons - ground cloves
  • 1/2 teaspoons - allspice
  • 1 cups - chopped pecans
  • Directions:

    Combine sugar and oil. Beat in eggs, one at a time. Mix in lemon rind, pumpkin and vodka.

    Sift all dry ingredients. Stir into pumpkin mixture. Fold in nuts.

    Pour into two well-greased 9"x5"x3" loaf pans. Bake in preheated 350 degree F oven for 1 hour, 10 minutes.

    Cool 10 minutes before removing from pans. Cool completely on cooling racks.
