  • 1 - beef flank steak, about 1 pound
  • 1 - medium onion, cut into strips
  • 1/2 cups - medium salsa
  • 2 tablespoons - chopped fresh cilantro, optional
  • 2 tablespoons - fresh lime juice
  • 2 cloves - garlic, minced (or more)
  • 1 tablespoons - chili powder
  • 1 teaspoons - ground cumin
  • 1/2 teaspoons - salt
  • 1 - small green bell pepper, cut into strips
  • 1 - small red bell pepper, cut into strips
  • - flour tortillas, warmed
  • - additional salsa, cheese, sour cream, green onions, etc., additional toppings
  • Directions:

    Cut flank steak lengthwise in half, then crosswise into strips; place meat in slow cooker.
    Combine onion, salsa, cilantro, lime juice, garlic, chili powder, cumin and salt and add to slow cooker.
    Cover; cook on LOW 5-6 hours.
    Add bell pepper strips; cover; cook an additional 1 hour on LOW.
    Serve with flour tortillas and additional toppings, as desired.
