Ingredients:

  • 2 teaspoons - garlic, minced
  • 1 pieces - ginger, 1-inch, grated
  • 2 tablespoons - red wine vinegar
  • 1 1/2 teaspoons - curry powder
  • 1 tablespoons - water
  • 1 teaspoons - cumin
  • 1 teaspoons - salt
  • 1/2 teaspoons - black pepper
  • 1 1/2 pounds - boneless, skinless chicken thighs
  • 2 cups - cooked long-grain white rice
  • 3 - plum tomatoes, diced
  • - cilantro, to taste
  • Directions:

    In slow cooker, combine garlic, ginger, red wine vinegar, curry powder, water, cumin, salt and pepper. Add chicken thighs; toss to coat well. Cook for 7 hours on low.
    Add cooked rice, plum tomatoes, and cilantro, and serve.
