Slow Cooker Chicken Taco Stew Tell a Friend

  • 1 - onion, chopped
  • 1 cans - 16 oz. black beans, rinsed, drained
  • 1 cans - 16 oz. kidney beans, rinsed, drained
  • 1 cans - 16 oz. corn (OR 1/2 bag frozen corn), drained
  • 1 cans - 8 oz. tomato sauce
  • 2 cans - diced tomatoes and green chilies
  • 1 packages - taco seasoning
  • 2 - boneless, skinless chicken breasts
  • - grated cheese, sour cream, cilantro or tortilla chips, optional toppings
  • Directions:

    Mix everything together in a slow cooker except chicken.

    Lay chicken on top and cover.

    Cook on low for 6-8 hours or on high for 3-4 hours.

    30 minutes before serving, remove chicken and shred.

    Return chicken to slow cooker and stir together.

    Top with cheese, sour cream, cilantro or tortilla chips, if desired.

      This does sound really good, and easy, too. I haven’t tried anything with chicken in my slow cooker, this would be a good one to try, hard to mess up!
