Slow Cooker Chicken Posole Stew Tell a Friend

  • 4 - boneless skinless chicken breasts, (or equivalent in tenders)
  • 2 cans - hominy, rinsed and drained
  • 3 cups - low sodium chicken broth
  • 2 cans - diced tomatoes, undrained
  • 3 - carrots, sliced thin
  • 3 - green onions, sliced
  • 3 cloves - minced garlic
  • 1 tablespoons - ground cumin
  • 2 teaspoons - chili powder
  • 1 teaspoons - oregano, (freeze-dried is best)
  • 1 teaspoons - salt, or to taste
  • Directions:

    Put chicken in bottom of crock pot. Add all other ingredients on top, stirring to combine.
    Cook on high 5-6 hours or low 7-8 hours.
    Remove chicken, shred with a fork and return to the pot.
    Serve with tortilla chips and shredded cheese of desired.
