  • 1 - avocado, peeled, pitted
  • - cucumber, chopped
  • 1/2 - red pepper, deseeded, chopped
  • - juice of a lime, to taste
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - chili powder
  • - other seasonings, to taste
  • - yellow bell pepper wedges, for serving with
  • Directions:

    Coarsely mash peeled and pitted avocado in a bowl.

    Chop cucumber in small pieces and add 1/2 to avocado mixture.

    Deseed and chop 1/2 red pepper in small pieces; add to mixture.

    Add lime juice, salt, chili powder and any other desired seasonings, and mix well.

    Serve with yellow bell pepper wedges.
