Skillet Teriyaki Chicken with Pineapple Tell a Friend

  • 1 tablespoons - olive oil
  • 1 pounds - boneless, skinless chicken tenderloins or breasts, cut into 1-inch pieces
  • - salt and pepper
  • 2 cloves - garlic, minced
  • 2 cups - broccoli florets
  • 1 - red bell pepper, stem and seeds removed, diced
  • 2 cups - fresh pineapple, cubed
  • - sesame seeds, optional garnish
  • - cooked brown rice, optional, for serving with
  • Sauce
  • 1/4 cups - low sodium soy sauce
  • 1/4 cups - pineapple juice
  • 1 teaspoons - sesame oil (Or olive oil)
  • 3 tablespoons - honey
  • 2 teaspoons - fresh grated ginger
  • Directions:

    Heat a skillet over medium heat, add olive oil and chicken pieces. Season chicken with salt and pepper and cook until lightly browned, 4 or 5 minutes. Add garlic and saute for about a minute, mixing with the chicken.

    Add broccoli, pineapple and bell pepper to skillet; cook for 5 more minutes or until vegetables are tender and chicken is cooked through.

    For the sauce: In a small bowl, whisk together pineapple juice, oil, soy sauce, honey and ginger; add sauce to skillet, reduce heat slightly, and bring to a simmer.

    Serve sprinkled with sesame seeds and enjoy.
