Simply Shrimp with Linguini Tell a Friend

Ingredients:

  • 1 pounds - raw shrimp, peeled, deveined
  • 1/2 cups - extra virgin olive oil
  • 5 cloves - garlic, minced
  • 2 tablespoons - fresh lemon juice
  • 1/2 cups - fat-free Swanson chicken broth
  • 3 tablespoons - fresh parsley, chopped
  • - salt and pepper , to taste
  • - hot cooked linguine
  • Directions:

    Heat olive oil in a 9-x-13-inch glass baking dish in a 400° F oven.

    Stir in shrimp, garlic, lemon juice and chicken broth; return to oven for 3 minutes.

    Remove from oven and mix in parsley. Continue baking until shrimp are opaque, about two minutes longer.

    Season to taste with salt and pepper and serve over hot linguini.
