Shrimp Veracruz Tell a Friend

Ingredients:

  • 1/4 cups - olive oil
  • 2 - jalapeno chilies, seeded, minced
  • 2 tablespoons - minced garlic
  • 1 teaspoons - minced peeled fresh ginger
  • 20 - uncooked large shrimp, peeled, deveined, tails left on
  • 1 cups - dry sherry
  • 1/2 cups - chilled butter (1 stick), cut in pieces
  • 1 tablespoons - chopped fresh cilantro
  • 1 tablespoons - chopped fresh chives
  • - cooked rice, for serving with
  • Directions:

    Saute jalapenos, garlic and ginger for 1 minute; add shrimp and cook until pink.

    Add sherry and bring to a boil. Reserve.

    Whisk in butter slowly. Mix in cilantro. Serve warm over rice.
