Shrimp and Pasta with Tomato Salsa Cruda Tell a Friend

  • 1 pounds - large plum tomatoes, coarsely chopped, about 2 cups
  • 1/4 cups - packed fresh basil leaves, thinly sliced
  • 1 tablespoons - balsamic vinegar
  • 1 tablespoons - oil, preferably olive oil
  • 1 cloves - garlic, minced
  • 1 teaspoons - salt
  • 1/4 teaspoons - pepper
  • 12 ounces - pasta, preferably fusilli
  • 1 1/2 pounds - medium shrimp, peeled and deveined
  • Directions:

    Bring a large pot of water to boil.

    Meanwhile, in a bowl combine the tomatoes, basil, vinegar, oil, garlic, salt and pepper; set aside.

    Cook pasta in boiling water according to package directions, adding shrimp 3 minutes before end of cooking time; drain.

    In a serving bowl, combine pasta mixture with reserved tomato mixture.
