Shiitake Chowder Tell a Friend

Ingredients:

  • 2 cups - White Beans , Cooked with seaweed
  • 2 cups - Water
  • 4 - Large fresh shiitake mushrooms , Stems removed
  • 2 tablespoons - Avocado Oil
  • 1 - Small yellow onion, Diced
  • 1 - Red potato, Diced
  • 1 cups - frozen corn
  • 1/2 teaspoons - Celery powder
  • - Salt & Pepper to taste
  • - Fresh Thyme leaves , Optional
  • - Sliced green onion, For garnish
  • 1 - Carrot, Diced
  • Directions:

    Purée cooked beans along with their juices in a high-powered blender. Sauté diced onions and diced shiitake mushrooms in the avocado oil till the onion is soft. At the diced potatoes and diced carrots and sauté a few more minutes then deglaze pan with the water. Cook over low heat till potatoes and carrots are soft. Add the puréed beans, the corn, thyme, celery powder, salt and pepper. Continue cooking to warm through. Serve topped with sliced green onion if desired.

    in response to a request for a vegan soup that mimics clam chowder, though I've no idea what clam chowder tastes like...hope it's yummy!

    Notes

    If you don't have celery powder add diced celery (about 1 cup) to the mix when sautéing the onions and mushrooms.
