Scrambled Grains with Mushrooms Tell a Friend

Ingredients:

  • 1 pounds - mushrooms, trimmed & sliced
  • 2 tablespoons - vegetable oil
  • - salt & pepper
  • 2 cups - cooked grains, like brown rice or quinoa
  • 1 - small fresh chile, minced
  • 2 - eggs, beaten
  • 2 tablespoons - soy sauce
  • 1/2 cups - chopped scallions
  • Directions:

    Rinse, trim, and slice 1 lb mushrooms.
    Put 2 Tbsp vegetable oil in large skillet over medium-high heat.
    Add mushrooms and sprinkle with salt and pepper.
    Cook, stirring, until brown, 5 to 10 minutes.
    Add 2 cups cooked grains (like brown rice or quinoa) and 1 small minced fresh chile.
    Cook 3 to 5 minutes.Stir until set.
    Drizzle with 2 Tbsp soy sauce.
    Sprinkle with 1/2 cup chopped scallions.
