Scampi with Pasta Tell a Friend

Ingredients:

  • 1 1/2 pounds - shrimp, peeled, deveined
  • 3 tablespoons - butter or margarine
  • 3 cloves - large garlic, minced
  • 1/2 cups - minced onion
  • 1/4 cups - dry white wine
  • 1/2 cups - tomato sauce
  • 1 1/4 cups - whipping cream
  • 1/2 teaspoons - dried basil
  • 1/2 teaspoons - dried oregano
  • 1 teaspoons - salt
  • 1/8 teaspoons - white pepper
  • 3 - egg yolks
  • 12 ounces - dry vermicelli
  • 2 tablespoons - parsley
  • Directions:

    Rinse shrimp.

    Melt butter in large skillet; saute garlic over medium heat, stirring constantly for 1 minute. Add shrimp and onion and saute over medium-high heat until shrimp is bright pink on both sides, about 5 minutes.

    Add wine, tomato sauce, 1 cup of cream, basil, oregano, salt and pepper; heat through.

    Beat egg yolks with remaining 1/4 cup cream. Add to sauce over medium heat and stir constantly until sauce thickens. Do not boil.

    Meanwhile, cook vermicelli for 8 to 10 minutes; drain.

    Arrange vermicelli on heated platter; pour sauce over pasta. Sprinkle with parsley.
