  • 2 - shallots, minced
  • - butter, for cooking
  • 3 - green peppers, diced
  • 4 - red peppers, diced
  • 2 cups - fresh basil leaves, loosely packed
  • 3/4 pounds - prosciutto, thinly sliced and chopped
  • 3 cups - whipping cream
  • 1 pounds - fettuccine, cooked al dente, well-drained
  • 2 pounds - bay scallops
  • 3/4 pounds - shredded cheese
  • Directions:

    In a large skillet, saute shallots until soft.

    Add peppers, basil and prosciutto; saute 5 minutes. Add cream and simmer until slightly reduced.

    Remove pan from heat; add cooked, well-drained pasta, scallops and cheese.

    Pour into casserole dish. Bake in preheated 350 degree F oven for 30 minutes.
