Savoy Cabbage with Butternut Squash Tell a Friend

  • 1 quarts - savoy cabbage, chopped
  • 3 cups - butternut squash, medium diced
  • 1 cups - onions, diced
  • 4 slices - bacon
  • 1 tablespoons - red wine vinegar
  • 1 teaspoons - sugar
  • 4 tablespoons - extra virgin olive oil
  • - salt and pepper, to taste
  • Directions:

    In a large saute pan, add oil and bacon; cook until bacon is lightly crispy and add onions. Saute for a few minutes until onions are soft.

    Add quash and cabbage and saute until they are all tender. Add remaining ingredients and season with salt and pepper.
