  • 2 tablespoons - extra-virgin olive oil, 2 turns of the pan
  • 1 1/4 pounds - Italian hot or sweet sausage, ground or taken out of casings
  • 1 - medium onion, chopped
  • 2 - carrots, peeled and chopped
  • 1 - large potato, peeled and chopped into a small dice
  • 2 cloves - garlic, minced
  • 1 - bay leaf
  • 2 cans - white beans, drained and rinsed
  • - Salt and pepper
  • 4 cups - chopped kale, escarole or broccoli rabe
  • 2 quarts - chicken stock, low-sodium
  • - Grated fresh Parmesan to pass at table
  • Directions:

    1. Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown.
    2. Add veggies, bay leaf and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables.
    3. Add greens and wilt.
    4. Add stock and cover pot.
    5. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 15 minutes.
    6. Adjust seasonings and serve soup with grated cheese, for topping.

    Brief Description

    A very quick soup that tastes like it's been cooking all day. Tons of flavor from the sausage and you can add any greens you have on hand.

    *I find broccoli rabe to be very bitter and prefer a hearty green in this instead.
    *This freezes great, so make double if you can and freeze it for later!
