  • 4 - medium potatoes, peeled and cubed
  • 2 tablespoons - canola oil
  • 1 - small onion, halved and sliced or diced
  • 1/4 cups - cooked, shredded bacon pieces, optional
  • 1 pounds - smoked sausage, cut into 1/4-inch diagonal pieces
  • 1 containers - (16 ounces) sauerkraut, rinsed and well drained
  • 1/4 teaspoons - pepper
  • 1/8 teaspoons - salt
  • Directions:

    In a large skillet, saute the potatoes in hot oil for 5-8 minutes or until lightly browned. Stir in onion (and bacon pieces, if using), and saute for 3-4 minutes more or until onion is tender.

    Stir in the sausage, sauerkraut, pepper and salt.

    Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.
