Sausage and Dirty Rice Skillet Tell a Friend

Ingredients:

  • 2 1/4 cups - water
  • 8 - small red potatoes, quartered
  • 10 ounces - frozen peas and carrots
  • 1 1/2 cups - quick cook brown rice
  • 16 ounces - smoked sausage, sliced
  • 1/2 - small onion, diced
  • 1/2 - small red bell pepper, diced
  • 1/2 teaspoons - garlic powder
  • 1 1/2 teaspoons - chili powder
  • 1 teaspoons - cumin
  • 2 - scallions or green onions, sliced, optional
  • 2 tablespoons - fresh parsley, finely chopped, optional, for garnish
  • Directions:

    In a large skillet over medium-high heat, cook the potatoes in the water for 7 minutes.

    Stir in the rice, sausage, onion, bell pepper, garlic and chili powder and cumin.

    Bring to a boil and then reduce heat to a simmer; cover and cook for about 10 minute or until rice is tender.

    Top with scallions and parsley, if desired, and serve!
