Ingredients:

  • 1 - lug of tomatoes (1o to 14 pounds), skinned
  • 6 - green peppers, diced
  • 6 - large onions, diced
  • 1 stalks - celery (entire stalk), diced
  • 1 cups - brown sugar
  • 1 bunches - cilantro, chopped
  • 3 cups - cider vinegar
  • 3 tablespoons - salt
  • 1 tablespoons - pepper
  • 1/2 pounds - chili peppers, or up to 1 pound (seeds make it hot, use to taste)
  • Directions:

    Combine all ingredients in a large kettle.

    Stir; simmer about 3 hours or until thick.

    Put into sterilized jars; process in a boiling-water bath for 15 minutes (water should cover jars).
