Salmon with Cucumber Sauce Tell a Friend

Ingredients:

  • 1 pounds - salmon filets, cut into 4 pieces
  • 2 teaspoons - ground cumin
  • 1/2 teaspoons - paprika
  • pinchs - red pepper
  • 1 1/2 cups - plain lowfat yogurt, to make yogurt cheese
  • 1/2 tablespoons - diced cucumber
  • 1 tablespoons - chopped dill
  • 1 teaspoons - minced garlic
  • 1/4 teaspoons - salt
  • Directions:

    To make yogurt cheese for cucumber sauce:
    Set a medium strainer over a bowl, line with a coffee filter or 2 paper towels, and add yogurt. Cover with plastic wrap and refrigerate at least 4 hours. Scrape into a bowl and refrigerate until ready to use.

    Mix together cumin, paprika, and red pepper; spread as rub over salmon fillets. Bake for 10 minutes.

    Mix remaining ingredients together and pour over fish.
