Salmon with Cilantro Pesto Tell a Friend

  • 4 pieces - salmon
  • 1/4 cups - almonds, sliced or slivered
  • 1/2 cups - cilantro, chopped
  • 2 1/2 tablespoons - chicken broth
  • 1/2 tablespoons - lime juice
  • 2 tablespoons - almonds, sliced or slivered
  • 2 tablespoons - shredded parmesan cheese
  • 1 tablespoons - garlic and herb seasoning blend
  • Directions:

    Preheat oven and glass baking dish to 450. Add all ingredients except salmon and 1/4 cup almonds to blender and puree. Spray the glass baking dish with spray oil and place salmon pieces skin side down in the dish. Spread Pesto over salmon pieces. Sprinkle 1/4 cup almonds over salmon. Bake at 450 for 12 minutes or until just cooked through.
