Salmon with Arugula and Tomato Sauce Tell a Friend

  • 1 pounds - plum tomatoes, seeded and chopped
  • 3/4 cups - lightly packed arugula, basil or Italian parsley
  • 1/2 cups - olive oil
  • 1 - shallot, choppped
  • 1 1/2 tablespoons - fresh lemon juice
  • 4 - 6 oz salmon fillets
  • Directions:

    Combine first 5 ingredients in a medium bowl. Season with salt and pepper. Preheat broiler or grill. Broil without turning until just cooked through. Transfer salmon to plate. Spoon tomato mixture over. Garnish with lemon wedges.
