Roasted Potatoes with Garlic Tell a Friend

Ingredients:

  • 4 1/2 pounds - medium red and all-purpose potatoes, unpeeled and cut into quarters
  • 2 - medium red onions, each cut into 6 wedges
  • 1/4 cups - olive oil
  • 1 1/4 teaspoons - salt
  • 1 teaspoons - dried thyme
  • 1/2 teaspoons - coarsely ground black pepper
  • 2 cloves - garlic, minced
  • Directions:

    Preheat oven to 425 degrees F. In a large roasting pan (about 17 inches by 11-1/2 inches), toss potatoes with remaining ingredients.

    Roast 1 hour, turning occasionally with metal spatula, until golden and fork-tender.

    Serve roasted potatoes warm or at room temperature.
