Risotto with Zucchini Tell a Friend

  • 6 - small zucchini (and blossoms), cooked
  • 6 cups - chicken stock
  • 5 tablespoons - butter
  • 1 - onion, chopped
  • 2 cups - Italian rice
  • 1 cups - dry white wine
  • 1 cups - Parmesan cheese
  • - salt and pepper, to taste
  • Directions:

    Melt butter and saute onion. Add rice, and brown.

    Add wine and 2 cups broth. Cook until absorbed.

    Add remaining broth and during the last 10 minutes of cooking, add the cooked zucchini.
