Ingredients:

  • 1 tablespoons - lemon juice
  • 3/4 cups - mayonnaise
  • 1/2 cups - sliced green olives (stuffed)
  • 2 cups - cooked white long grain rice
  • 2 cups - chopped cooked chicken breast
  • 1 cups - chopped celery
  • 2 tablespoons - sliced green onions
  • 1/4 cups - sliced almonds
  • - dash of pepper
  • - endive, optional, for serving with
  • - hot croissants, optional, for serving with
  • - fresh fruit - strawberries, cantaloupe, honeydew), optional, for serving with
  • Directions:

    Mix together. Serve on a bed of endive and pass around hot croissants.

    Fresh fruit complements this dish (strawberries, cantaloupe, honeydew).
