Rice Dressing Tell a Friend

Ingredients:

  • 1 tablespoons - oil OR Pam cooking spray
  • 1 pounds - lean ground beef
  • 1 cups - boiled chopped chicken livers and gizzards
  • 1/2 cups - chopped green onion
  • 1/2 cups - chopped onion
  • 1/2 cups - chopped green pepper
  • 1/2 cups - chopped celery
  • 2 cloves - garlic
  • 1 teaspoons - salt, add more to taste
  • 1 teaspoons - pepper, add more to taste
  • 1/8 teaspoons - cayenne pepper, or add more to taste
  • 4 cups - chicken broth, made from bouillon cubes or use fat-free chicken broth
  • 8 cups - cooked rice
  • 1/2 cups - chopped green onion, for garnish
  • Directions:

    Brown beef in oil or Pam.

    Add gizzards, liver, onions, green peppers, celery and garlic.

    Season with salt, pepper and cayenne. Simmer for 10 minutes.

    Add broth and bring to a boil. Lower to simmer and cook for 10 more minutes.

    Add rice and stir; cover. Turn off burner and let sit.

    Before serving, add green onions.
