Ray’s Banana Cake Tell a Friend

Ingredients:

Dry Mix
  • 2 1/2 cups - All-purpose flour
  • 1 2/3 cups - Sugar
  • 1 1/4 teaspoons - Baking powder
  • 1 1/4 teaspoons - Baking soda
  • 1 teaspoons - Salt
  • Wet mix
  • 2/3 cups - Shortening
  • 2/3 cups - Buttermilk
  • 3 whole - Bananas, mashed
  • 2 whole - Eggs, large
  • Directions:

    Preheat oven to 350 degrees.
    Mix all dry ingredients in a large bowl. In a medium bowl, mix together the shortening, 1/3 cup buttermilk and the bananas until fully incorporated. Then add to the dry ingredients and mix until smooth. Add the other 1/3 cup buttermilk and the eggs into the mixture and mix until blended. Add 1/4 cup chopped nuts if desired.

    Pour mixture in a greased 13x9 pan and bake at 350 degrees for 35 minutes. Let cool and top with cream cheese frosting and nuts if desired.
