Raw, Dairy-Free Zucchini Alfredo Tell a Friend

Ingredients:

  • 4 - zucchini
  • 1 cups - raw macadamia nuts, soaked overnight in water with 1 teaspoon salt
  • 1 cloves - garlic, crushed
  • 1 cups - extra-virgin olive oil
  • 1/2 cups - spring or filtered water
  • - juice of 1 lemon
  • 2 teaspoons - wheat-free tamari
  • 1/4 teaspoons - ground cayenne pepper
  • - pinch of unrefined sea salt
  • Directions:

    Peel the zucchini thinly with a vegetable peeler, so that they resemble fettuccine ribbons.

    Blend together in a blender all of the remaining ingredients - the nuts, garlic, oil, water, lemon juice, tamari, cayenne and salt - and pour over the zucchini ribbons as your sauce.
