Cut off stems and discard tough and damaged leaves.
Tear into 3-4 inch pieces and wash.
In saucepan, cover with 2 inches cold water.
Turn heat on to simmer.
As soon as bubbles appear on side of pan remove from heat.
Drain and reserve cooking water.
Rinse broccoli rabe in cold water to stop cooking.
Cover with damp towel and refrigerate until ready to use.
