Quinoa Granola Tell a Friend

  • 1 cups - whole rolled oats
  • 1 cups - buckwheat
  • 1/3 cups - quinoa
  • 3/4 cups - almonds, coarsely chopped
  • 1/4 cups - pumpkin seeds
  • 1/2 cups - walnuts, coarsely chopped
  • 1/4 cups - shredded coconut
  • 2 teaspoons - cinnamon
  • 2/3 cups - dried cherries, coarsely chopped
  • 1/3 cups - honey or maple syrup
  • 1/3 cups - coconut oil, melted
  • Directions:

    1. Mix all ingredients in a large bowl.
    2. Spread mixture onto a baking sheet lined with parchment paper.
    3. Bake for 60 minutes at 225ยบ.
    4. Let cool, then crumble into a tightly sealed container.

    Brief Description

    This granola is so incredibly addicting!!! You mayyy find yourself eating it like cookie dough even before you slide it into the oven... I love it with rice milk or nonfat Greek yogurt. The fact that a double batch is so quick and easy to whip up yet lasts several breakfasts is really worth it!
