    Brief Description

A ground beef stew with beans, corn, and tomatoes.

    Main Ingredient:

    ground beef

    Category:  Soups

    Cuisine:  Mexican

    Prep Time: 10 min
    Cook Time: 30 min

Sometimes I brown the ground beef and onion, and then mix all ingredients in the slow cooker and let sit on low heat for the day. Add olives and cheese at the end.
Crumbled tortilla chips and some grated cheddar cheese make a nice topping for serving, too.
I often substitute black beans for the kidney beans.
