  • 1 cups - strong coffee
  • 2/3 cups - evaporated milk
  • 1/3 cups - pumpkin
  • 2 teaspoons - granulated sugar, or more, to taste
  • 1/4 teaspoons - pumpkin pie spice OR ground cinnamon
  • 1 teaspoons - pure vanilla extract
  • - whipped cream, for topping, optional
  • Directions:

    Mix all ingredients except the whipped cream together in a 2-cup microwave safe glass dish or small saucepan. Heat until very hot (for stovetop preparation, cook over medium-low heat, stirring occasionally).

    Carefully pour into mugs. Top with whipped cream, if desired.

    To make a foamy top to the latte, prepare ingredients as above (without whipped cream). Then carefully place the hot mixture into a blender container; cover with lid and hold down lid with folded towel or potholder while blending for 1 minute.
