Pumpkin Pistachio Quick Bread Tell a Friend

  • 1/2 cups - raisins
  • 3 tablespoons - rum
  • 1 packages - Pillsbury quick pumpkin bread mix
  • 3 tablespoons - oil
  • 2 - eggs
  • 1/2 cups - chopped pistachios
  • Glaze
  • 1/4 cups - sugar
  • 2 tablespoons - water
  • 1 tablespoons - butter
  • 1 tablespoons - rum
  • Directions:

    Preheat oven to 350 degrees F. Butter and flour a 9-x-5-x-3-inch loaf pan.

    Soak raisins in rum for 30 minutes. Drain rum from soaked raisins into a cup and add enough water to make one cup of liquid.

    Add this liquid to package of Pillsbury pumpkin bread mix and add remaining bread ingredients. Fold in soaked raisins and blend.

    Pour into a loaf pan and bake for 40 to 45 minutes.

    For glaze:
    Boil sugar, water and butter until sugar is dissolved. Boil 3 minutes longer, stirring. Stir in rum and brush over top of loaf.

    Cool one hour.
