Pumpkin Doughnuts (or mini-muffins) Tell a Friend

Ingredients:

Mix the following together:
  • 1/2 cups - vegetable oil
  • 3 whole - eggs
  • 1 1/2 cups - sugar
  • 1 1/2 cups - pumpkin puree, 1 15oz. can
  • 1 1/2 teaspoons - pumpkin pie spice
  • 1 1/2 teaspoons - salt
  • 1 1/2 teaspoons - baking powder
  • Add flour, stirring just until smooth.
  • 1 3/4 cups - flour
  • 2 tablespoons - flour
  • Cinnamon-Sugar
  • 1/2 cups - sugar
  • 1 tablespoons - cinnamon
  • Directions:

    Preheat oven to 350°. Prep doughnut pan or mini-muffin pan with non-stick spray. Mix together first 7 ingredients until well blended. Add flour and stir just until smooth. Fill doughnut pan openings or mini-muffin cups 3/4 full. Bake doughnuts for 15-18 minutes. Bake mini-muffins for 11 minutes or until toothpick inserted comes out clean. Mix cinnamon and sugar together while doughnuts/muffins are baking. After cooling for a few minutes, remove doughnuts from pan and roll in cinnamon-sugar (or shake gently in a bag).

    Baked doughnuts if you have a doughnut pan, or mini-muffins if you don't! Either way, BAKED, not fried.
