  • 4 - eggs, beaten
  • 3 cups - sugar
  • 2 cups - pumpkin puree
  • 1 cups - salad oil
  • 1 tablespoons - nutmeg
  • 1 tablespoons - cinnamon
  • 2 teaspoons - salt
  • 2/3 cups - water
  • 3 1/2 cups - whole wheat pastry flour
  • 2 teaspoons - baking soda
  • Directions:

    Mix together all above ingredients, except for water and flour. Add the water alternately with the flour. Pour into greased and floured pans and bake for 1 hour in a moderate oven (about 350 degrees F).

    Makes 3 loaves in bread pans.

    This can be baked in cans and frozen. You can also use pureed squash, sweet potatoes or carrots instead of pumpkin, if desired.
