Potatoes Florentine Tell a Friend

Ingredients:

  • 2 - medium potatoes, pared and thinly sliced
  • 1 - medium onion, sliced
  • 1 packages - frozen chopped spinach, thawed and drained
  • 3/4 cups - Bisquick baking mix
  • 1 3/4 cups - milk
  • 1/2 cups - shredded cheddar cheese
  • 2 - eggs
  • 3/4 teaspoons - salt
  • 1/2 teaspoons - Italian seasoning
  • 1/8 teaspoons - pepper
  • Directions:

    Heat oven to 350° F. Grease rectangular baking dish, 12 by 7.5 by 2 inches.

    Layer potatoes in dish; top with onion. Mix remaining ingredients together; pour over top.

    Bake until potatoes are tender, about 35 minutes.
